Hard Cider Bistro Bread (Easy!)

 


Making bread is not always the easiest (those of you who spent weeks perfecting your sourdough over quarantine know firsthand), so when it comes to a quick and easy bread recipe, I'm in! This is a recipe I created to replicate Kenny's and my FAVORITE bread from a restaurant in Lexington that we love. It only takes six ingredients, and it comes together quickly - you can have bread that's crusty on the outside and warm and soft on the inside in just an hour, most of which is baking time!


This bread is best served hot and eaten the same day it's baked, so it's great to serve a group for dinner or to bring to a gathering. It's a take on beer bread, and it's so good alongside soups and chilis. I also love serving it as an appetizer when we're watching a football game. I make mine with hard cider, but you can use any beer you like, or even regular sparkling cider. The bread takes on the flavor of whatever cider or beer you use, so it's up to you!

Ingredients: 

  • 3 cups flour
  • 5 tsp baking powder 
  • 1 tsp salt
  • 1/2 cup sugar
  • 12 oz hard cider (or your favorite beer, or nonalcoholic sparkling cider)
  • 1 tbsp butter, melted, plus more for serving

Directions: 

  1. Preheat oven to 350 degrees F and butter an 8" or 9" loaf pan. 
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar. 
  3. Add hard cider slowly to eliminate as much foam as possible. Mix until just combined. 
  4. Pour batter into prepared loaf pan and bake for 50 minutes. 
  5. After 50 minutes, brush the top of the bread with melted butter and let it soak in for 10 minutes before removing the bread from the pan. 
  6. Slice with a serrated knife, and serve warm with butter!
