If you're a regular reader of Shenandoah Sugar, then you probably know that I LOVE to cook and bake. I'm constantly trying new recipes, and I love collecting all of my favorite recipes to save and use again and again (mainly on Pinterest!) I thought it would be fun to share some of my favorite recipes that I've been making a lot over the past several months, especially since it's Monday and I know a lot of us are trying to meal plan for the week! For those of you who are new, my husband and I are vegetarian so I will mention any substitutions I make to these recipes to make them vegetarian-friendly.

White wine garlic cream sauce: This sauce is absolutely heavenly - it's sort of like alfredo sauce taken up a notch with the delicious flavor of white wine. The recipe says it's for ravioli, but I use it for gnocchi and regular pasta too.

Italian chopped salad: This is such a delicious salad - I first made it as a side one day when we were doing a cookout at my parents' house, but lately I've been adding Daring chicken to serve it as a light and fresh dinner. I'm not a huge fan of the dressing part of the recipe, so I usually just add my favorite store-bought Italian dressing.

Black bean enchiladas: These are so yummy! The rolling process is a little extra work, but this recipe makes a great meatless dinner - and the leftovers are perfect reheated in the oven.

White bean lemon pesto orzo soup: As someone who makes a lot of soups, this one really stands out! The pesto and lemon add such a unique flavor, and I love the texture of the orzo. The orzo absorbs a lot of liquid, so if you want your soup brothier I recommend adding more liquid or reducing the amount of orzo you use.

Cheeseburger salad: This is such a yummy salad, the dressing recipe is DELICIOUS (I usually double it) and I love the addition of the dill pickles. I use Beyond ground beef to make it vegetarian.

Cheesy fiesta rice: I love this for a healthy weeknight meal! I use Daring chicken to make it vegetarian and pre-riced frozen cauliflower to skip the process of "ricing" it myself.
Ranch dressing: I am somewhat of a ranch dressing snob (store bought dressing is no good!), and I LOVE that runny "restaurant" ranch. This recipe achieves exactly the flavor I hope for when ordering ranch at a restaurant! The only change I make to this recipe is that I sub additional pickle juice for the buttermilk (the recipe already calls for some pickle juice - Claussen is the best), and I usually add a lot more pickle juice than it calls for (I eyeball it) to achieve my desired thinness (I also find it thickens up in the fridge, so I sometimes add more pickle juice later).
Cowboy caviar: This dip/salad is a southern tailgate classic! It blew up on Tiktok a year or two ago, and since then it has been my go-to dish to bring to gatherings - it's great served with chips like a salsa, or on the side like a salad. I follow the screenshotted recipe linked with a couple tweaks: I halve the dressing recipe (it's plenty!) and I add a bunch of fresh cilantro.

Funfetti cookies: These are a go-to cookie recipe in my house - they're chewy and delicious! I'm not really a fan of chocolate chip cookies (I know!!!) so these are a good alternative. I'm not saying they're better than Crumbl, but Kenny DOES say that. 😉

Best cake ever: PEOPLE OF EARTH: If you combine the following two recipes, you will be left with the best cake that you've ever had in your life. For the actual cake, I use this doctored up cake mix recipe - it's slightly easier than making cake from scratch, and tastes like it's from scratch. For the filling and frosting, I follow the filling/frosting portions of this recipe - the mascarpone frosting is a GAME CHANGER. Speaking of game changers, I have to share my tip that sends layer cakes over the top: make a small batch of simple syrup (I do about 2 tablespoons of sugar dissolved into 2 tablespoons boiling water) and brush it on each of the cake layers before you add the filling/frosting - it makes the cake SO moist, even if it's slightly overbaked.
