What I've Been Cooking Lately

I'm always browsing new recipes to try, and I love seeing what other people are cooking on a day-to-day basis! I've been keeping a list of some of my favorite recipes that I've made lately to share for those of you who are also looking for tried-and-true recipe recommendations. These are all vegetarian-friendly, and I swap ingredients for plant-based alternatives when necessary.

Mediterranean bean salad: If you like cowboy caviar, this is its Mediterranean counterpart. It's great for weekday lunch prep or as a crowd-pleasing potluck dish with its crunchy, fresh vegetables, toothsome, nourishing beans, and salty feta. Serve it alongside crusty bread for a filling lunch or with tortilla chips for a crowd. It's easily customizable, I use whatever olives I have on hand and I also like to add avocado to serve.

Vegetable pot pie soup: This is such a good comfort meal - especially when served with biscuits on the side! I love any dish with wine in it and, a splash of white wine really takes the flavors of this soup up a notch. It doesn't call for mushrooms, but I would add some diced button mushrooms next time I make it.

Cheeseburger salad: This is a yummy, filling salad that does not skimp on flavor. The star is the homemade mustard vinaigrette - it's SO good, I always double it and I use pickle brine in place of the vinegar to make it extra cheeseburger-y.

Tater tot breakfast casserole: My husband is a big fan of breakfast casseroles, and this one has everything you want in a hearty breakfast baked right in. I prefer this to similar recipes because it uses tater tots instead of bread - the texture of eggy bread grosses me out!

Butter tofu: I love making Indian-inspired dishes, and the sauce in this recipe is lick-your-plate good (make sure to serve with naan so you can mop up every last drop!) The baking process for preparing the tofu gives it great texture, and I've used the method for other dishes too after discovering this recipe.

Chickpea noodle soup: Whether you don't eat chicken or you're just in the market for a meatless dish, you can't beat this savory soup. The ingredient that sends it over the top are these homemade noodles which I find at my local grocery stores but I've also seen at farmers markets.

Hard boiled eggs: It seems like everyone has a different way that they like to cook their hard-boiled eggs, and this is the one that I have discovered works best for me. They come out perfectly with no gray yolks, and the shell comes right off when you peel them.

Pesto pea pasta: This unassuming pasta dish packs major flavor with plenty of basil, garlic, and lemon juice. I appreciate that it makes the exact amount of pesto needed so you're not left with extra. I'm not a huge sundried tomato fan, so I opt to omit those and instead, garnish with sliced cherry tomatoes at the end for a fresh, juicy bite.

Cajun gnocchi: As written, this recipe is vegan, but I un-vegan it with heavy cream and real cheese. 😂 This is a delicious and comforting one-pot meal that's not your average gnocchi dish.

Sweet corn and basil orzotto: This is one of my all-time favorite summer dishes, and is best made right now when sweet corn and basil are in peak season! The beauty of this dish is in its simplicity, and the few ingredients come together to form a complex symphony of flavors that I'd pay good money for at a restaurant. 


Cold brew tea: You can barely call this a "recipe," but it's my favorite way to always have fresh iced tea of any variety in the fridge!

Cinnamon swirl banana bread: This banana bread recipe from the depths of Pinterest is the best one I've ever tried - and I've tried a LOT! I always come back to this one because it's moist, tender, and has an irresistible ribbon of cinnamon sugar running through the center.

Lemon-almond butter cake: Oh my goodness, if you're making dessert for guests you MUST try this butter cake! It's so simple and flavorful, and the texture is perfection. The recipe includes scratch-made lemon curd, but you could totally use store-bought to save time. If you make your own and don't want to have too much left over, I recommend halving the ingredients listed in this recipe.

Chocolate peanut butter no-bake bars: I'm certain that I've mentioned this recipe before - it's one of my most-made desserts to bring to gatherings because it's quick and easy and always a hit. These bars are basically like Reese's that you can cut into any size you want!
