1. Steamed clams: If you need an easy and impressive at home date night recipe, look no further. My mom and I made these clams on New Years Eve in an attempt to replicate a dish that we fell in love with on our Cape Charles trip last summer, and they were SO dang good! The only thing we did differently was adding red pepper flakes. The broth that comes together is liquid gold (don't salt it! It will be very salty from the clams), be sure to serve these clams with bread and/or over pasta.
2. Liz P. Woods creamy garlic rice: This recipe is from one of my favorite Instagram accounts to follow - it's such a delicious side dish, it seriously tastes like something you'd get at a fancy steakhouse.
3. Sausage and ditalini soup: I love a hearty, creamy soup this time of year - this one is so flavorful and comforting, and I love the addition of ditalini, it's one of my favorite pasta shapes.
4. Chickpea curry: This chickpea curry is SO flavorful - I've made a lot of chickpea curry recipes and Kenny and I agree that this is the best. I added a bunch of chopped spinach and a can of diced tomatoes for some extra veggies. You technically need a New York Times subscription to view this recipe (which I don't have), but I've had success viewing it by just Googling the recipe name: "coconut curry chickpeas with pumpkin and lime."
5. Meatballs and orzo: I technically have only made the orzo component of this recipe as I subbed the meatball part for pre-made vegan meatballs, but OMG the orzo alone is worth making - it is so flavorful and reminds me of vodka pasta!
6. Philly cheesesteak sloppy joes: This recipe is a favorite of Kenny's, he asked me to make it for dinner this week and I am happy to oblige because it's delicious! I like serving it on buttered, toasted buns, and I think I might serve it over tater tots this time around.
7. Cabbage soup: Kenny and I love cabbage, so I tried this recipe on a whim. It looks kind of boring but OMG it is addictive (I can't believe I'm saying that about cabbage soup but it's true 😂). The recipe makes a lot of soup and I often tire of soup if I have to eat the same batch all week long, but I never got tired of eating this! Melt a little parmesan on top and serve it with some crusty bread.
8. Breakfast casserole: I had a lot of leftover bread going stale, so I made this breakfast casserole to use it up. I'm not big on breakfast casseroles but this one was good, and Kenny was a BIG fan. I added extra seasonings and some chopped spinach for extra veggies.
9. Chex mix: My friend made this around Christmastime and it is ADDICTIVE, I demanded she share the recipe with me. It's described as "cheesy ranch," but I just find it savory and delicious. I have made this twice since Christmas and it's easily customizable to your taste - I like adding bagel chips, cashews, and extra Chex.
10. Carrot cake bars: This is one of Kenny's favorite baked goods I make - they're so chewy and yummy, you can also add raisins if you like those in your carrot cake (I do!) This would be a perfect dish to bring to any upcoming Easter celebrations you have - easier to make, transport, and serve than a cake but just as yummy!
